The ants you see on the worktop are a small fraction of the colony. Foraging workers are the part that leaves the nest looking for water and food, while the queens and the brood stay hidden inside a wall void, under a tile, behind a skirting board or out in the garden. That is why a can of spray from the supermarket clears the counter for an afternoon and changes nothing by the next morning.
It can make things worse. Two of the species that come indoors most often here, the pharaoh ant and the ghost ant, live in colonies with many queens. When they are sprayed, the colony responds by splitting and moving, which is called budding, and one kitchen problem becomes three smaller ones in different rooms. Ants are also a signal worth reading: a steady trail usually points at a water source, a leaking trap, an air conditioning condensate line or an untended spill.

We identify the species, follow the trail back to where it is coming from, and place gel bait the foragers carry home and share with the colony, including the queens. Identifying which one you have is the first thing we do, because it changes the treatment completely.
Two reasons. Spraying a multi-queen colony such as pharaoh or ghost ants makes it split and move, so one trail in the kitchen becomes several in different rooms. And residue on the surface makes foraging workers avoid the area, which is exactly where the bait needs to go. Wiping the trail with soapy water is fine and actually helps, because it removes the pheromone track.
We use products approved for the purpose and place gel bait in small amounts in cracks, hinges and voids where children and pets cannot reach it, rather than spraying open surfaces. In kitchens and food preparation areas baiting is the standard approach for that reason. The technician tells you which surfaces to leave alone and for how long before you start work.
Expect the trail to get busier for a day or two first. That is the bait working: the workers have found a food source and are recruiting others to carry it back. Activity then drops as the colony feeds on it. Most kitchen trails quieten down within about a week, and larger or established colonies take longer and may need a second placement.
Shop products kill the ants you can see, which is a small part of the colony and the part most easily replaced. They do not reach the queens, and with the multi-queen species they can scatter the colony. A bait the workers carry home is what reaches the part that matters.
